A delicious, savory baked noodle dish with golden onions and a crispy top! Made with ingredients in this JRA food box, plus eggs.
Serves: 6–8
Prep and cooking time: Approximately 1 ½ hours
Oven temperature: 350°F
Baking dish: 8×10-inch or 9×9-inch (or similar size)
Ingredients
- 1 bag (12 oz) egg noodles
- 2 large onions, thinly sliced
- 1 packet Lipton Kosher Onion Soup & Dip Mix
- 3 large eggs
- ½ cup water
- 3 tablespoons oil, divided (2 tablespoons for cooking onions, 1 tablespoon for the egg mixture)
- Additional oil for greasing the baking dish
Instructions
- Get ready: Preheat oven to 350°F. Lightly oil your baking dish. Fill a large pot with water and bring it to a boil. While the water heats, peel and thinly slice the onions.
- Start cooking: When the water boils, add the egg noodles. Do not add salt to the water—the onion soup mix provides all the salt needed. Cook for about 6 minutes, until just slightly underdone, since the noodles will continue cooking in the oven. Drain well.
- Cook the onions at the same time: While the noodles cook, heat 2 tablespoons oil in a large skillet over medium-low heat. Add the sliced onions and cook, stirring occasionally, until soft and golden brown, about 20–25 minutes. Lower the heat if they begin to burn.
- Make the egg mixture: While the onions are cooking, whisk the eggs and ½ cup water together in a large bowl. Stir in the onion soup mix and let it sit for a few minutes so the dried onions can soften and absorb the liquid. Stir in the remaining 1 tablespoon oil.
- Combine: Add the drained noodles to the egg mixture and stir gently to coat. Let the noodles sit in the mixture while the onions finish cooking, so they can absorb some of the flavor.
- Add the onions: When the onions are golden, add them to the noodles. Gently stir, separating any clumps of onions so they are evenly distributed.
- Bake: Pour the mixture into the prepared baking dish and spread evenly. Bake uncovered for approximately 35–45 minutes, until the top is golden and the center is set.
- Serve: Let cool for 5–10 minutes before cutting and serving.
Make It Your Own!
